I'm putting all shadowing as one EC, categorizing it as "Other." Within the description I'm listing the doctors' names, the dates I shadowed them, how many hours total, and a general description of what I did/saw (observed OB triage, etc.).

If you feel your shadowing experiences were quite different and you want to say a little about each one, separate them out. TMDSAS doesn't have a limit on number of entries. If you plan to use the AMCAS app as well later, AMCAS does limit your activities to 15 so you would probably lump them together on AMCAS.
