I got both Sharpshooter challenge 8 & 9 easily. Granted I didn't get either until the final few missions of the game though. In the mission where you finally take down Dutch you should get this easily you don't even need to use Dead Eye. Then wait a for a few missions and you'll also get nine just as easily. Boards.

lancaster with explosive rounds , they don't have to be perfect just dead and the lancaster holds 14 rounds. Don't use deadeye, that automatically reloads. I've heard eagle eye resets the count too, so maybe avoid that. I just grab the varmint rifle and shoot a few birds.
